Grilled Cheese: Now With More Grill!

I dunno, when I cook up a grilled cheese it’s because I’m deep in the doldrums of scumbaggery! If I have the energy to fire up the grill I’m cooking something different.

I also don’t see a ton of added flavor to this. maybe the bread gets a nice smokey tang, but frankly it seems like a lot of bother to me.

Still his choices of cheeses and spices are worth a look! My wife rocks her grilled cheese bland and gooey, I like mine to have more than a bit of spice!

    I like some BBQ rub sprinkled on the cheese for some added zing.

    Don’t get me wrong, I love the guy and follow his advice all the time, but I thought that Alton Brown’s MO was to add more fiddling to get that extra little bit of flavor?
