Wow, I checked on the Pepper Vodka, and after just 3 days its the color of Iced tea and smells VERY strong. So I decanted and bottled it. Wow its a bit strong, but VERY refreshing and STRONG. I may dial back the peppercorns just a bit to mellow it out a bit. Still this stuff is darker than the scotch that previously occupied the bottle its residing in.
Should make a killer martini!

You should put it in a spray bottle and keep it in case of bear attacks.

That I’m going to have to judge. I dipped a tablespoon into the unfiltered jar and it seemed a bit rugged. But then I poured a glass over ice and I found it really pleasant.
Of course I also have the tail-end of a head-cold, and I had a chipoltle chicken salad for my dinner so my pallet was hardly clean, so this needs further investigation.
I will say this batch was NOT a failure!
I use pepper vodka to make Bloody Marys. Absolutely fantastic.
