Whole Lotta Bacon Goin’ On

In the Wee’d Kitchen we have BACON!!!

Have one batch in the oven for bacon vodka, and then I’ll cook a second batch for eating! Fun times!

FYI cooking bacon in the oven is awesome! Just put it on a rack in a pan and cook at 350 for 15 mins, no spattering, no burns, easy clean-up!

I think the important question is…is it recursive bacon? 🙂

Call me crazy, but I still think that bacon tastes better when you cook it in a cast iron skillet.

You’re not crazy, cast iron gets the edges nice and crispy, and promotes good browning, but its messy and you need to constantly watch it, and unless you have one of those massive diner griddles, it takes a while to cook a whole pound of bacon. I cooked two this morning and it took me just under an hojr, and I also made tea, my lunch got dressed and brushed my teeth, and wrote this blog post.

Also for smaller batches skillet wins. If you like your bacon hot-and-freash and keep your spare bacon in the fridge. I like to cook it all in a sitting and pick at the ready-to-eat smokey goodness in the fridge until its gone and its time for more bacon!

I’ve got a 16 inch cast iron skillet. Would be perfect for a pound of bacon. I cooked 2 pounds in my 12 incher once, but it took four batches to get it done.

  3. The best way is in the deep fat fryer. Quick, consistent, tasty, and it makes the fries taste like bacon.

Plus you get to say, “It’s Bacon! Cooked in 100% vegetable oil with NO cholesterol!”

Second best way is in a cast iron skillet. But you need to cook it very slowly so that the rendered bacon grease ends up with little bits of bacon in it. Lard sandwiches anyone? If you cook it too quickly, you’ve burnt all those lovely bacon bits and destroyed the grease. Use the grease in place of butter or to keep your corn bread from sticking to the cast iron.

Oven bacon is OK, and it’s a good way to do a lot of bacon, but you have to watch it carefully. or it can quickly burn The price of cooking bacon in your oven is eternal vigilance.
